Need to calibration of infrared thermal imager, the infrared image gray - temperature fitting method, but is the matlab was used to extract the 8-bit grayscale values, not precise enough, ask a great god knows how to extract the image 14 gray-level signals, software algorithm and so on?

Yes, so-called gray (or luminance) figure is per pixel R=G=B

The Gray (I, j) for the transformed in black and white image (I, j) point grey value.

There should be a professional display?

Can display 10 is a professional display of gray, as far as I know no can display 16 grayscale display, dynamic adjustment range is generally through the software, each part can only display gray-scale,
