I am attempting to mock web client call below to test a call to get an Okta token. I am getting a null pointer exception when I attempt to mock the webclient.post() section of the code. I have tried adding various fields such as headers, and changing things from @Mock to @MockBean, but I still continue to get the null pointer exception. I am aware that I could in theory use MockServer, but I am curious on how to get this to work using straight mocking. Any help would be greatly appreciated.

The NPE is caused by a typo:
when(responseSpec.toEntity(String.class).thenReturn(response));
should be
when(responseSpec.toEntity(String.class)).thenReturn(response);
As responseSpec.toEntity was not stubbed yet (you were in the process of stubbing), it returned null. null.thenReturn(response) throws NPE.
Note that there are more issues with your test - you are creating new WebClient in your method under test, which means your mocked client is not used by method under test.
