I am trying to write a function that will allow me to fill the color of certain paths in my SVG image. Here is a snippet of the SVG itself.

My goal is to be able to use JS to manipulate the color of the path. For example, when I add style="fill: green" to one of the path tags, it works, but this is done directly in the svg file. I would also like to do this for ALL path tags with a certain class name. So I'd like to change the color on the image to green for every path tag who's class is "Argentina" for example.
This is what my SVG looks like in HTML

I don't think the SVG XML code is inlined into the HTML if you embed it using . In order to change it using JavaScript, you will have to put the contents of the SVG file into your code.
Try copying and pasting the contents of the SVG file into your HTML, and then you should be able to operate on it using JavaScript.

A more detailed answer outlining the steps to manipulate svg elements may be useful to others who land on this question.
Assuming the svg image is embedded into the html document, svg path (and any other) tags can be manipulated in javascript in the same way as regular html tags are.
The process involves making a javascript reference to the element(s) represented by the tag. For tags with a unique id attribute, this might be achieved with the commonly used:
element = document.getElementById("tagID");
The unique element can then have its attributes manipulated using, for example to fill the path representing Brazil (id="BR in the svg markup) red:
const brazilPath = document.getElementById("BR");
brazilPath.setAttribute("fill","red");
Note the .setAttribute of an element object takes two quotted parameters, the property name (in this case "fill"), and the value to be assigned to the property (in this case a colour, red).
Where sets of elements are to be processed (such as the two paths needed to trace Argentina in the svg) an html collection (an array-like list of element references) can be made using any css selector that is common, and specific, to the elements to be targeted as the parameter of the querySelectorAll method:

path.Argentina specifies "path elements of class Argentina". Including 'path' in the selector makes it more specific to the desired target (for example, the html page might have other elements with the class 'Argentina' which we want to ignore).
The html collection list returned by .querySelectorAll can be looped-though to have its attributes manipulated:
